They’re all wrapped by the dumpling queen, who cooks the glutinous rice ahead of time. The salted yolks are soaked in-house for a month, giving them a sandy texture. Giant dragon boat dumplings are the most popular, with glutinous rice and mung beans providing a dense texture.
