”Dai pai dong“ emerged because the labours (coolie) could only afford inexpensive food, while those non-fit labours made a living by provided affordable, authentic meals to them.

In 1847, there were over 7000 dai pai dongs across HK. To address the impact on the city‘s appearance, the government introduced the ”Big License“ system. Initially, there were two types: with fire and without food stalls. Over time, it expanded to five categories: congee, noodles, rice, dessert and drinks.

By the 1980s, cooked food centers emerged, and government restrictions led many street food stall move indoors. Today, fewer than twenty remain.
